1 1/2 cup iceberg lettuce, chopped 1 1/2 cup romaine lettuce, chopped 1 1/3 Tbl plum tomatos, seeded and diced 2
Tbsp pepper green, seeded and diced 2 Tbsp pepper red, seeded and diced 4 Calamata olives, seeded and quartered 1/8
cup red onion, chopped 1/8 cup mushrooms, sliced Salt and pepper, to taste 1/4 cup Cottage Cheese 1 Tbsp balsamic
vinaigrette
Directions:
Place all ingredients except for vinaigrette and cottage cheese in a bowl. Toss well. Add vinaigrette
and cottage cheese. Mix well. Serving Suggestion: Serve the salad over a radicchio cup. Garnish with cracked
