Ingredients:
Sugar Free Jello (original recipe recommends Orange, but you can potentially use others)
3/4 - 1 cup water
3/4 - 1 cup cottage cheese (same amount as water)
Fruit and or cool whip to top (Optional)
Graham cracker crust (Optional)
Directions:
Anyway it's based on a low-carb cheesecake recipe. Basically you mix up sugar-free Jello (the original recipe recommends
orange, but all I had on hand when testing this was cherry, which doesn't seem to be the best choice) in less water than required,
about 3/4 to 1 cup. Let it cool to room temp, then throw it in the blender with about the same amount of cottage cheese.
Blend
until really smooth and there are no white bits left. Pour into a bowl and let it set in the fridge. It makes a sort of mousse
that I then put fruit on. I think some experimentation is still required with flavouring, presentation, and getting proportions
right, but it's not bad for a snack when you want something sweet.
You could also put it into the standard cheesecake graham crust and make it a no-bake cheesecake.
