Ingredients:
1 egg white 1/2 cup cottage cheese 1/2 cup cup Bob's Redmill 10-grain pancake mix 1 tsp Splenda ½ tsp vanilla
extract ¼ cup sugar-free maple syrup
Directions:
Blend together cottage cheese, egg whites and vanilla (I use a handheld 'stick' blender) Add waffle mix and Splenda and
mix til smooth. Mixture is slightly thick. Pour batter in pre-heated waffle iron coated with cooking spray. You MUST spray
iron for every batch! Do not overfill! Cook until well browned, these take longer to cook then regular waffles but every iron
varies. Serve with syrup.
